This is one of my all time favorite way to use up cherry tomatoes! It can be used as a spread for bread/toast, heated and placed over meats or noodles. It is an all around easy dish and total kid pleaser.
In this jar we have 5 different kinds of cherry tomato including round red, yellow pear, green striped, yellow round, and red pear, but you can use any kinds of cherry tomatoes you have access too. We do advise that you use at least 2 different kinds though a sweet and a tart.
1 Gallon of Cherry Tomatoes
10 Cloves of Garlic
2 Large onions
Olive Oil (4-5 tablespoons)
Sea Salt (to taste, but we usually use 2-3 teaspoons)
Preheat your conventional oven or toaster oven to 425 degrees F. Slice all cherry tomatoes in half. Slice garlic cloves into strips. Slice onions in half and then into 1/4" strips. Spread all the veggies onto 1-2 cookie sheets. Drizzle olive oil over the tomatoes, onions and garlic and then mix them up on the cookie sheet. Sprinkle salt on top of the produce and place the cookie sheet into the oven. Bake until caramelized, we start checking at about 20 minutes but it could take an hour.
You can also do this in smaller quantities and place on baking sheets in a toaster oven!
The Tray pictured on the bottom just went in the oven and the tray on top is ready to take out. You can see how the tomatoes have lost a lot of the water and taken on a caramelized color. You can take it right out and serve it or let it cool and then pack in a container for the refrigerator. We like to keep a jar of this in the fridge all summer long for toast with breakfast.
